Shrimp and Crab “Ceviche” with Cilantro and Mango
Serves: 6
Ingredients
• ½ lb large shrimp, cooked, peeled and deveined
• ½ lb crab meat, cleaned
• 1 mango, peeled and chopped
• ¼ cup fresh lime juice
• ¼ cup fresh orange juice
• 1 Tblsp chopped shallot
• 1 handful fresh whole cilantro leaves
• 1 cup cherry tomatoes, halved
• 1 small serrano pepper, seeded and chopped (optional)
Instructions
1. Cut the shrimp in half lengthwise and then into small ½ inch pieces.
2. Combine the shrimp and crab meat in a large bowl with the remaining ingredients. Chill for several hours.
3. Toss and serve in individual cocktail glasses, bowl or on a bed of Bibb lettuce.
